Low-Effort Salmon Sheet Pan

Sheet pan recipes are the biggest life hack for when it comes to making a meal that doesn’t require much energy and doesn’t leave you with a pile of dirty dishes to tackle after! This salmon dish easy, healthy, and delicious!

Ingredients

1 bag of yellow baby potatoes, thinly sliced

1 bag of broccoli florets, separated into small pieces

~1 lb of salmon

3 garlic cloves, thinly sliced (I actually used minced garlic from a jar for an extra lazy version)

teriyaki sauce

dried thyme

1 lemon, cut in wedges

salt

pepper

olive oil


Prep Time ≈ 20 mins

Cook Time ≈ 40 mins

Total Time ≈ 1 hour


Directions

Step 1 –  Preheat oven to 400°

Step 2–  Add potatoes in an even layer to a sheet pan lined with parchment paper and drizzle olive oil, salt, pepper, and thyme. Mix well and cook for 10-15 mins to soften.

Step 3- Add broccoli to sheet pan and drizzle olive oil, salt, pepper, and garlic. Mix well so everything is evenly coated.

Step 4 – Add salmon to the middle of the pan and drizzle with teriyaki sauce. Massage into the salmon. Cook for 20-25 minutes until everything is fully cooked. To check, poke the potatoes and broccoli with a knife – they should be soft!

Step 5 – Plate and squeeze fresh lemon 🙂 Enjoy!

As someone cooking for only herself, this meal makes about 3 servings. Such a simple way to take care of yourself when you’re feeling lazy!
