Refreshing Israeli Tomato & Cucumber Salad

Spring is officially here!🎉 I may have filmed this with my mom during the holiday season, but it felt right to share this recipe as the warmer weather approaches. The combination of these ingredients just make for such a refreshing and flavorful dish that is perfect for this time of year. I recommend serving this on the side of a delicious Middle Eastern dinner, or simply by itself as a salad for lunch!

1 english cucumber, cubed

1/4 of an onion, diced

2 tomatos, diced

handful of parsley

1 lemon, juiced (≈ 3 tbsp.)

olive oil (≈ 6 tbsp.)


Prep Time ≈ 15 mins

Cook time ≈ 0 mins

Total Time ≈ 15 mins


Step 1 – Combine all prepared ingredients to a bowl and mix well!

Another simple salad that consists of fresh ingredients that compliment each other so nicely. Feel free to add feta for even more flavor! 🍅🥒🍋
