Looking for something simple to make during the week for lunch when you’re in a time crunch? When I know I’m going to be making this chickpea salad, I never have to stress about it. I love eating this salad when I’m either in a rush or extremely busy since it’s super easy to either prep the night before and throw together in the morning before going into work, or to throw together during your lunch break if you WFH!

Ingredients
1 can of chickpeas/ garbanzo beans (15.5 oz.), drained
Handful of parsley, chopped
2 scallions, chopped
1 tbsp. lemon juice
2 tbsp. olive oil
Salt
Prep Time ā 10 mins
Cook time ā 0 mins
Total Time ā 10 mins
Directions
Step 1 – Combine all prepared ingredients into a bowl. Make sure to add salt!
