I know this may be a hot take, but I do NOT like mayo – like it grosses me out.π¬ Luckily for me, my mom always made an non-mayo based potato salad that is seriously so easy to make.. The potatoes just absorb the lemon juice so well, making this the perfect dish to either serve by itself for a quick lunch, or on the side of just about anything! I love pairing it with fish or as a side at a BBQ.

Ingredients
1.5 lb. petite gold potatoes (can use any kind of small potato)
Handful of parsley, chopped
1 lemon, juiced (use as much as you’d like)
Olive oil (measure with your heart β₯οΈ)
Salt
Prep Time β 15 mins
Cook Time β 15 mins
Total Time β 30 mins
Directions
Step 1 – Add full bag of potatoes to a pot and cover with cold water. Turn stove to high heat and bring to a boil.
Step 2 – While waiting for the potatoes to boil, prep your parsley and squeeze the lemon.
Step 3 – Once potatoes are boiling, bring heat down to medium and cook for about 15 minutes, until soft. Poke with a knife to check if they are done.
Step 4 – Strain potatoes and let cool down until you can comfortably touch and cut them (should still be warm). Cut them however you would like (I do medium sized slices).
Step 5- Add sliced potatoes to a bowl. Add salt, lemon juice, olive oil, and parsley to the bowl immediately to allow for the warm potatoes to absorb the dressing. Mix together & enjoy as a salad alone or as a side!
